Marinated Kalamata Antipasto for foodservice

Ingredients:

2 cups olive oil
3 oz. garlic gloves, peeled and quartered lengthwise
1/3 cup chopped fresh marjoram
3 tablespoons chopped fresh rosemary
2 teaspoons crushed red pepper flakes
1-1/2 cups balsamic vinegar
2-1/2 pounds roasted red bell peppers, cut to 1-1/2-inch pieces
1-1/2 quarts (1-3/4 pounds) Lindsay® Greek Kalamata Olives with Pits
1-1/2 pounds fresh mozzarella cheese, cut to 1-inch wedges

Directions:

Heat oil in a medium sauté pan over medium heat. Add garlic, herbs and pepper flakes and remove from heat. When oil has cooled, stir in vinegar.

In a large hotel pan, combine roasted red bell peppers, olives, and cheese. Add oil mixture; toss to coat. Refrigerate at least 3 hours. Bring to room temperature before serving.
