Olive and Blue Cheese Salsa

Ingredients

1 (6 oz.) jar Lindsay® Sicilian Style Pitted Olives
1/2 cup (2 oz.) crumbled blue cheese
1/4 cup chopped red onion
2 tablespoons olive oil
2 tablespoons chopped fresh chives
1 tablespoon red wine vinegar
1/4 teaspoon freshly ground black pepper

Directions:

In a medium bowl, combine all ingredients; mix well. Cover; refrigerate at least 2 hours or overnight. Let stand at room temperature 30 minutes before serving. Serve with grilled chicken, pork or beef.
