Garlic Lemon Chicken Salad

Ingredients

  • 3 tablespoons extra-virgin olive oil

  • 2 tablespoons white wine vinegar

  • 1 large clove garlic, minced

  • 2 teaspoons finely shredded lemon peel

  • 1/4 teaspoon freshly ground black pepper

  • 1 can Lindsay® Black Ripe Olives, drained

  • 6 cups packed mixed salad greens or spring greens

  • 2 cups coarsely shredded or chopped cooked skinless rotisserie or grilled chicken breasts

  • 1/2 cup very thinly sliced small red onion, separated into rings

  • 2 tablespoons shredded Parmesan or Asiago cheese


Cooking Directions

  1. In a medium bowl, combine oil, vinegar, garlic, lemon peel and pepper; mix well.

  2. Add olives; mix well and let stand 10 minutes.

  3. Meanwhile, arrange salad greens on four serving plates. Top with chicken and onion rings. Spoon olive mixture over salads; top with cheese.
