Chicken, Olive, Pear and Brie Pizza

The combination of sweet pears and salty olives gives this recipe a unique and delicious flavor. It is always a welcome treat in our home.

Ingredients:

4 large pears
2 tablespoons extra virgin olive oil
4 tablespoons very good quality balsamic vinegar
Two 12-inch pizza shells
1 medium boneless and skinless chicken breast, cooked and cut into bite-size pieces
¾ cup Lindsay®  Peppy Pimiento Queen Olives, sliced
6 to 8 ounces very good quality Brie cheese, cut into small chunks
Parmesan cheese to taste, optional

Directions:

Preheat over to 425 degrees. Slice the pears lengthwise, very thin, about one-quarter inch thick. Set aside.

In a small bowl, combine the olive oil and vinegar. Brush each pizza shell with the oil and vinegar mixture. Scatter chicken pieces, olives and pears evenly on each pizza shell. Add brie pieces on top.

Bake in a 425 degree oven for 10 to 12 minutes. Allow to cool for five minutes before cutting into wedges and serving. If desired, sprinkle with Parmesan cheese before serving. Two shells provide 12 pieces.
