Ingredients:
1 tablespoon olive or vegetable oil
3/4 lb. skinless boneless chicken breasts, cut to 3/4-inch cubes
1 tablespoon finely chopped garlic
3 (15 oz.) cans white beans, drained
2 (4 oz.) cans chopped mild green chilies
1 (6 oz.) can Lindsay® Naturals Green Ripe California Pitted Olives, drained
1 cup chicken broth
1-1/2 cups thinly sliced green onions
1-1/2 tablespoons ground cumin
1-1/2 teaspoons dried oregano leaves
Salt and hot pepper seasoning or cayenne pepper (optional)
Directions:
Optional garnishes: chopped tomato, shredded white cheddar or other cheese, sour cream, chopped fresh cilantro. Heat oil in a large saucepan over medium-high heat. Add chicken and garlic; sauté 3 minutes. Stir in remaining ingredients except salt, hot pepper seasoning and garnishes. Cover; bring to a boil. Reduce heat; simmer 10 minutes. Season with salt and hot pepper sauce to taste if desired. Garnish as desired.
