Grilled Double Cheese & Pimiento Sandwiches

Ingredients:
4 oval slices sourdough bread
2 tablespoons basil pesto sauce
4 slices Provolone cheese
1 (4 oz.) jar Lindsay® Sliced Pimientos, drained
2 tablespoons butter, softened
2 tablespoons grated Parmesan cheese
Directions:
Spread one side of each slice of bread with pesto sauce; top with a slice of cheese. Dry pimientos with a paper towel; arrange evenly over 2 of the cheese topped bread slices. Close sandwiches. Combine butter and Parmesan cheese; spread over outsides of sandwiches.
Heat a large nonstick skillet or griddle over medium heat. Add sandwiches; cook 4 minutes or until bottoms are golden brown. Turn; reduce heat to medium-low and continue cooking until cheese has melted, about 4 minutes.
