2 tablespoons olive oil, divided
1/4 cup minced onion
1/4 cup minced green pepper
1 cup shredded cooked chicken
1/3 cup coarsely chopped raisins
1/3 cup plain tomato sauce
1 (10 oz.) 12-inch thin prepared pizza crust or 1 (13.8 oz.) tube refrigerated pizza dough
1 cup (4 oz.) shredded mozzarella cheese
2/3 cup halved Lindsay® Ripe Pitted Olives
1 cup (4 oz.) shredded Gouda or smoked Gouda cheese
Heat oven to 450°F. Heat 1 tablespoon of the oil in a large skillet over medium high heat; add onion and green pepper and sauté 4 to 5 minutes or until vegetables are tender. Remove pan from heat; stir in chicken, raisins, and tomato sauce.
Place pizza crust on a baking sheet; brush rim of crust with remaining 1 tablespoon of olive oil. Top crust with sauce mixture. Sprinkle mozzarella cheese evenly over pizza; top with olives and Gouda cheese. Bake 10 to 14 minutes or until crust is golden brown.
