Green Olive Salsa

Ingredients:

2/3 cup chopped apple, such as gala or granny smith
1/2 cup chopped Lindsay® Pimiento Stuffed Spanish Manzanilla Olives
1/4 cup olive oil
2 tablespoons chopped bottled roasted red pepper
2 tablespoons chopped yellow bell pepper
1 tablespoon minced shallot
2 teaspoons finely shredded lemon peel
Salt and pepper to taste (optional)

Directions:

In a large bowl, combine all ingredients; mix well. Serve with chips or over grilled salmon, chicken or pork.
