4 (6 oz.) pork chops, cut 3/4-inch thick
2 teaspoons Cajun or blackened seasonings, divided
1 ripe avocado, peeled, seeded and diced
1/2 cup halved Lindsay® Pimiento Stuffed Spanish Manzanilla Olives
2 teaspoons olive oil
2 teaspoons fresh lime juice
1 clove garlic, minced
Heat grill to medium-high heat. Sprinkle 1-1/2 teaspoons of the seasonings over pork chops. Grill on a covered grill 4 to 5 minutes per side or until pork is barely pink in center*. Meanwhile, in a medium bowl, combine avocado, olives, olive oil, lime juice, garlic and remaining 1/2 teaspoon seasonings; mix well. Spoon olive relish over hot cooked pork chops.
*Alternately, pork chops may be cooked in a ridged grill pan over medium heat 5 minutes per side.
