Salad Niçoise

Ingredients

  • 1 pound small red potatoes, cooked, quartered

  • 1 pound fresh green beans, cooked, cut in half

  • 1 cup baby carrots, cooked

  • 1 small red onion, sliced

  • 1/2 cup vinaigrette salad dressing

  • 1 (6 oz.) can Lindsay® Ripe Pitted Olives, drained

  • 4 plum tomatoes, quartered

  • 4 eggs, hard boiled, peeled, quartered

  • 2 (6 oz.) cans albacore tuna, drained, broken into chunks

  • 4 large red leaf or romaine lettuce leaves


Cooking Directions

  1. In a medium bowl, toss potatoes, green beans, carrots and onions with dressing.

  2. Fill 2 sections on platter with vegetable mixture.

  3. Arrange olives, tomatoes and eggs in remaining sections of platter.

  4. Place lettuce leaves in center of platter; top with albacore tuna.

  5. Serve over lettuce and accompany with crusty bread.
