Lettuce Wedges with Olive-Blue Cheese Dressing

Ingredients

1/4 cup light or regular mayonnaise
1/4 cup light or regular sour cream
1/4 cup milk
1 tablespoon white wine vinegar or cider vinegar
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup chopped Lindsay® Ripe Pitted or Pimiento Stuffed Spanish Manzanilla Olives (or a combination), chopped
1/3 cup crumbled blue cheese or gorgonzola cheese
1 head iceberg lettuce, cored, cut lengthwise into 6 wedges

Directions:

In a medium bowl, combine mayonnaise, sour cream, milk, vinegar, salt and pepper; mix well. Stir in olives and blue cheese. Place lettuce wedges on serving plates; spoon dressing over lettuce. Serve with additional pepper, if desired.

Kitchen Tips:

Variation: for Lettuce Wedges with Tangy Olive Dressing, substitute 1/3 cup chili sauce for the milk and vinegar and omit blue cheese. Proceed as recipe directs.
