Italian Green Beans with Olive-Tomato Dressing

Ingredients:
1 pound fresh green beans, trimmed
1/3 cup (1 oz.) thin strips reduced-fat pepperoni or dry salami
2 tablespoons olive oil
1 teaspoon minced garlic
1 cup halved Lindsay® Ripe Pitted Olives
1 cup seeded, chopped tomato
1 tablespoon balsamic vinegar
1 teaspoon dried marjoram or oregano leaves
Salt and ground black pepper, to taste (optional)
Directions:
Boil or steam green beans until tender-crisp. Drain and immediately cover beans with cold water; let stand until cool. Drain well; arrange on a serving platter. Meanwhile, in a small saucepan, combine pepperoni, olive oil and garlic. Heat over medium heat until pepperoni begins to sizzle. Remove from heat; stir in olives, tomatoes, vinegar and marjoram. Season with salt and pepper if desired. Spoon mixture over beans.
