Marinated Grilled Artichokes and Olives with Burrata

Creamy burrata is served with lemon and herb marinated grilled artichokes and buttery green olives for a keto friendly appetizer you won’t be able to resist!

Ingredients

  • 1 cup grilled artichoke hearts

  • 1 cup Lindsay Crafted Medium Green Olives

  • 1/2 cup olive oil

  • 3 large garlic cloves, sliced

  • 2 tbsp lemon juice

  • 1/2 tbsp red chili flakes

  • 6 fresh thyme sprigs

  • 3 wide strips lemon peel

  • 1 ball burrata


Cooking Directions

  1. In an 8 inch skillet, heat the olive oil over low heat. Add the artichoke hearts, olives, sliced garlic cloves, the lemon juice and peel, chili flakes and the thyme sprigs. Let sit for at least half an hour, or up to 1 week in the refrigerator.

  2. To serve, scoop the marinated artichokes and olives in a shallow bowl. Split the burrata open and scatter around the platter. Pour some of the marinated olive oil over top and serve with keto friendly flatbread or crackers for a delicious bite.
